Traditional Food In Your Country?

I wonder what traditional (national) foods are in your country.

In Finland the national food is potato (usually boiled).
However, we do have some specialities:
  • Mämmi (easterfood)

The kalakukko sounds rather interesting, jaukki. Does it have to be a particular type of fish, or just anything which is `in season?`

Also, do you go in for smorgasbord much in Finland?

Fish usually used is vendace or "muikku" as we call it. But sometimes kalakukko can be filled with for example Salmon.

I think that is mostly a Swedish thing.
